{"id":235,"date":"2017-12-28T09:07:32","date_gmt":"2017-12-28T14:07:32","guid":{"rendered":"http:\/\/angiewade.com\/?p=235"},"modified":"2017-12-28T09:07:32","modified_gmt":"2017-12-28T14:07:32","slug":"gf-coconut-lime-chicken","status":"publish","type":"post","link":"https:\/\/angiewade.com\/index.php\/2017\/12\/28\/gf-coconut-lime-chicken\/","title":{"rendered":"GF Coconut Lime Chicken"},"content":{"rendered":"<p>GF Coconut Lime Chicken<\/p>\n<p>4 boneless skinless chicken breasts<br \/>\n1\/4 tsp salt<br \/>\n1\/4 tsp pepper<br \/>\n1 TSBP coconut oil<br \/>\n1\/2 cup diced onion<br \/>\n1 cup chicken stock or broth<br \/>\n2 TBSP lime juice<br \/>\n1 TBSP chopped cilantro<br \/>\n1\/2 tsp crushed red pepper flakes<br \/>\n1\/2 cup canned coconut milk<br \/>\n1 TBSP corn starch mixed with 1 TBSP water<\/p>\n<p>1. Season chicken with salt and pepper. <\/p>\n<p>2. Melt coconut oil in large skillet over medium high heat. Brown chicken breasts on each side. Set aside on a plate. <\/p>\n<p>3. Add onion to the same skillet and cook until softened. Add chicken stock, lime juice, cilantro and chili flakes. Bring the mixture to a boil then reduce to a simmer for about 5 minutes. <\/p>\n<p>4. Add coconut milk and simmer for another 5 minutes. <\/p>\n<p>5. Add starch and water. Increase heat to activate starch. Once sauce begins to thicken, reduce heat. <\/p>\n<p>6. Add chicken back and cook for another 5-10 minutes. <\/p>\n<p>7.
