{"id":188,"date":"2014-11-14T12:41:03","date_gmt":"2014-11-14T17:41:03","guid":{"rendered":"http:\/\/angiewade.com\/?p=188"},"modified":"2014-11-14T12:41:03","modified_gmt":"2014-11-14T17:41:03","slug":"chicken-and-waffles-with-maple-gravy","status":"publish","type":"post","link":"https:\/\/angiewade.com\/index.php\/2014\/11\/14\/chicken-and-waffles-with-maple-gravy\/","title":{"rendered":"Chicken and Waffles with Maple Gravy"},"content":{"rendered":"<p>Chicken and Waffles with Maple Gravy<\/p>\n<p>INGREDIENTS<br \/>\nOven-Fried Chicken Ingredients:<\/p>\n<p>1 cup buttermilk<br \/>\n2 large egg whites, beaten<br \/>\n4boneless, skinless chicken breasts (about 2 lbs.)<br \/>\n1 cup Gold Medal\u2122 all-purpose flour<br \/>\n1\/3cup cornmeal<br \/>\n1\/2 teaspoon salt<br \/>\n3\/4teaspoon freshly ground black pepper<br \/>\n1\/4 teaspoon ground red pepper<br \/>\nCooking spray<\/p>\n<p>Buttermilk Waffle Ingredients:<br \/>\n2cups Gold Medal\u2122 all-purpose flour<br \/>\n2 tablespoons sugar<br \/>\n2teaspoons baking powder<br \/>\n1 teaspoon baking soda<br \/>\n1\/2teaspoon salt<br \/>\n2 cups buttermilk<br \/>\n1\/2cup (1 stick) unsalted butter, melted<br \/>\n1 teaspoon vanilla<br \/>\n2large eggs<br \/>\nCooking spray, for waffle iron<\/p>\n<p>Maple Gravy Ingredients:<br \/>\n3tablespoons butter<br \/>\n3 tablespoons Gold Medal\u2122 Wondra\u00ae quick-mixing flour<br \/>\n1-3\/4cups chicken stock<br \/>\nSalt and pepper to taste<br \/>\n1\/2 cup pure maple syrup<\/p>\n<p>DIRECTIONS<br \/>\n1<br \/>\nOven-Fried Chicken : Whisk buttermilk and egg whites in a shallow glass dish until well blended. Add chicken and turn to coat. Cover and marinate in the refrigerator for at least 30 minutes.<br \/>\n2<br \/>\nPreheat oven to 425\u00b0F. Line a rimmed baking sheet with foil. Set a wire rack on the baking sheet and coat it with cooking spray.<br \/>\n3<br \/>\nWhisk flour, cornmeal, salt, black pepper, and red pepper in a small bowl. Place the flour mixture in a paper bag or large sealable plastic bag. Place one piece of chicken in the bag and toss to coat. Shake off excess flour and place the chicken on the prepared rack. Repeat with remaining chicken breasts. Discard any leftover flour mixture and buttermilk marinade. Lightly coat chicken with cooking spray.<br \/>\n4<br \/>\nBake at 425\u00b0F for 30 minutes; turn the pan and bake 20 minutes longer, or until chicken is brown and crispy.<br \/>\n5<br \/>\nButtermilk Waffle : Preheat the waffle iron to medium-high heat.<br \/>\n6<br \/>\nIn a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt; set aside. In a large bowl, whisk together buttermilk, butter, vanilla and eggs; add the flour mixture, and mix until batter is combined. Do not over mix \u2013 there should still be some lumps.<br \/>\n7<br \/>\nSpray preheated waffle iron with cooking spray. Using a soup ladle, spoon a ladle full of batter into the waffle iron and close the lid. Cook until golden brown about 4-5 minutes. Serve immediately or keep warm for a few minutes in a low heated oven.<br \/>\n8<br \/>\nMaple Gravy : Heat butter in a heavy pan over medium heat. Add Wondra\u00ae flour and stir constantly 2-3 minutes until flour turns golden brown. Slowly whisk in stock. Over medium-high heat, bring to a boil, stirring constantly until gravy thickens (about 10 minutes). Season with salt and pepper to taste, then stir in syrup. Reduce heat to low until ready to serve.<br \/>\n9<br \/>\nTO ASSEMBLE CHICKEN &#038; WAFFLES: The idea is to get all of the amazing flavors in one bite! Stack a piece of chicken on top of a waffle and drizzle with generous amounts of maple gravy.
