{"id":182,"date":"2014-11-14T09:29:56","date_gmt":"2014-11-14T14:29:56","guid":{"rendered":"http:\/\/angiewade.com\/?p=182"},"modified":"2014-11-14T09:29:56","modified_gmt":"2014-11-14T14:29:56","slug":"italian-egg-drop-soup","status":"publish","type":"post","link":"https:\/\/angiewade.com\/index.php\/2014\/11\/14\/italian-egg-drop-soup\/","title":{"rendered":"Italian Egg-Drop Soup"},"content":{"rendered":"<p>Italian Egg-Drop Soup<\/p>\n<p>INGREDIENTS<br \/>\n6 cups reduced-sodium chicken broth<br \/>\n2 cups water<br \/>\n1 1\/3 cups whole-wheat medium pasta shells or other small pasta (4 ounces)<br \/>\n1 7-ounce can chickpeas, rinsed<br \/>\n1 bunch scallions, sliced, whites and greens divided<br \/>\nPinch of freshly grated nutmeg<br \/>\n3 cups chopped arugula, any tough stems removed<br \/>\n4 large eggs, lightly beaten<br \/>\nFreshly ground pepper to taste<br \/>\n2 tablespoons lemon juice<br \/>\n6 tablespoons freshly grated Parmesan cheese<\/p>\n<p>PREPARATION<br \/>\nCombine broth, water, pasta, chickpeas, scallion whites and nutmeg in a Dutch oven; cover and bring to a boil over high heat. Uncover and boil for half as long as directed by the pasta package, 3 to 5 minutes.<br \/>\nStir in arugula and cook until wilted, about 1 minute. Reduce heat to low. While stirring the soup constantly, slowly add eggs; cook for 2 minutes. (The cooked egg will look like feathery strands.) Season with pepper and stir in the scallion greens and lemon juice.
