GF Mustard Balsamic Pork Chops with Thyme

4-6 pork chops
1/4 olive oil
2 TBSP grainy mustard
1/4 cup balsamic vinegar
1 TBSP fresh or dried thyme
salt and pepper to taste

1. Whisk all ingredients (except pork chops) in a bowl.

2. Add pork chops to baking dish. Add marinade. Cover with plastic wrap and refrigerate at least 1 hour (up to overnight).

3. Preheat oven to 425.

4. Remove plastic wrap and bake for 45 minutes.
